I was wondering if you have to take a fight on the fight board for there to be any consequences. Or can you throw down in the PC3 saga thread and just leave whatever happens up to staff? I mean, Im assuming the fight board is strictly life or death, and no in between?

Not necassarily; it could end up with most or all surviving. You can have it happen in the PCIII thread or the fight board, but there's a better chance of Trunks and I getting to it through the latter.
