Oooh! I know you said I couldn't be a beholder (not even a blind and flightless one, you jerk) but I then thought it would be cool to be a pirate. Is there some special pirate prestige class or something?

Technically pirates are commonly simply fighter/rogues or similar classes with a sailing profession, at least as far as I know, but there are special prestige classes for your legendary pirates. Such as...

Also I believe great sea corsair or scarlet corsair for the ladies, from Song and Silence maybe? Legendary Captain and Leviathan Hunter could be construed as pirates. I'm not too versed on prestiges, but I'm pretty sure dread pirate is what your looking for.
