From my experiance with Jan:
You've got freedom with the red man. You can take a route like I did and sorta have his armour skin shed away at some point (mine after his KK training). He does have a basic human appearance, just has red skin and a tail (from what some gather).
He initally had only two forms. The big fat yellow form, and finally his red form which ever one basicly knows and loves. The common form on Chubbs is the red form, since he seems alot more simpler and human like for people to use that the big fat yellow one.
The child you speak of is the caretaker of the clensing machine in the afterlife. He was infected by the raw evil from the tanks when they exploded.
Provided you get approval from staff, you can twist a few transformations (like SK, KK and SKK) to give him a mild change of appearance though each step.
Now I'll shut up. =)

(Adding this since I'm not answering the question, but something useful Jan may not know)
If you preferred the look of the human kid that got used as a host, you could probably have chosen him as a character instead. When you choose the red guy, that's basically much what you get.
