You can't really change the height or other concrete physical features. You can grow your hair out fine, as we know he had hair, it just has to be somewhat similar to the way it was.
Example is how when I was Future Trunks, I let him grow his purple hair out like after the ROSAT training, and he had a purple half goattee as well. Nothing to drastic, but my own personalization.

90% of that is muscle mass. That's easily lost.
