Well, the ships that you can buy on the ships page, save for the fighter, can carry essentially as many as you want. Not a tonne of NPCs, but one should fit every character on Chubbs.
As for the ships on the shop page, it tells you.

As I said, if you are going to have NPCs boarding be reasonable, but you could hold a few hundred or so.
