where can i find the proffesions or the forum to goe a profession?

Professions
Professions are completely optional, but this is where the most zeni can be made. You pick a “Profession,” which is entirely up to you, and can be anything from a bricklayer to an assassin. Professions earn money based on a ranking system, Ranks 1-5. The zeni itself is made through “jobs" or "quests,” which offer cash rewards for successful completion that will be determined by your rank. The amount of potential zeni you can earn increases with each rank, but so does the difficulty in effort required to actually receive that amount. For instance, Rank 1 job quests yield relatively low money but are easy to complete, while Rank 5 yields relatively high money but is much harder to complete. Your “jobs” are role-plays that should be designed around the type of Profession you picked, so a bricklayer would do construction-type gigs, while an assassin would go after targets to capture or eliminate them. In order to go up in rank, you need to stick with a single Profession and successfully complete a certain number of "jobs" to go to the next level. If you decide to change Professions, your rank drops 1 level.
"Jobs” are simply tasks you give yourself that fall under a particular type of Profession. In order to qualify for zeni for job quests, you pick a post where the job starts, and you pick the post where it ends. Between those two points is where the Profession should come into play. When you’ve completed a job quest, post a thread in the Updates forum asking for a grade, and based on your rank and effort, you’ll receive zeni for it. Make sure you include the link to the thread, and the first and last post numbers of the job. Post numbers can be found on the top right-hand corner of a post, directly across from the time stamp. For example, if I’m a mercenary, and I role-play a quest for my Profession where I take out the head of a major corporation, my request would look something like this:

Keep in mind that job grading takes longer than normal updates, so please observe the 72-hour bump rule. Also, the zeni reward is given based on effort, so it is possible to earn less than the given amount. If you completed the job with satisfactory quality, then you earn the whole amount. If you didn’t give much effort, you’ll only earn a portion of the amount.
As far as multiple people go, if you’d like to role-play completing job quests in a group, you may do so. Each person involved will receive an individual grade, and each person’s pay will be determined by Profession, rank, and individual effort.
Although this is an entirely optional system for everybody, for tracking purposes each roster will have the default of “Unemployed.” This simply means you have not selected a Profession. You may choose your Profession at any point and time you’d like. Each one will have its rank listed next to it. For example, if you choose to be a bodyguard, your roster will list you as “Bodyguard - Rank 1.”

We talked about "jobs" up above, but "quests" are a little different. A "quest" is basically the same as a "job" but it doesn't give your character progress towards achieving their next profession Rank. If you're a Bricklayer and you go out and assassinate a head-of-state, you would call that a "quest" when asking for a reward instead of calling it a "job." Using the appropriate terminology makes it easier for staff when they need to confirm Ranks.
That's all copied and pasted from the Rules page. As for getting/changing a profession, should just need to stick an appropriate post in the updates page like this:
"Since I'm listed as a mercenary, I'll make the change to Assassin. "
Or, if you don't have one, from unemployed to whatever you're looking for.

where do you post a job before asking to get it graded?

You post in the IC Forums doing a job or quest. When you think you've done enough want to get your work graded you post a request in the updates forum, which is what I meant by posting there.
I accidentally misread your question, my apologies. You post in IC forums and then post in the Updates forum to get it graded.
