Isn't that kind of the same as just getting more money for doing better, which is represented by grading already?

No.

The most you can earn for a Rank 1 quest is lower than the most your can earn for a Rank 2 quest. And so on.

Or are there like ... plans to 'fail' people when they're higher ranked?

Yeah. Though its perfectly possible to fail a Rank 1 quest.

Speaking of which, how do you go up in rank?

You do Quests.

Can we change our professions? If so, is there a time limit on it, or a penalty for doing so?

Yes. No time limit, but changing your profession resets your Rank back to 1. Might look at changing that some day, but for now that's how we roll.
