Ult is short for ultimate, the ability triggered by the R key. These are super powerful abilities that can be ranked at levels 6, 11, and 16. You should always level up your ultimate whenever it's available.
A well-timed ult can win a teamfight, which puts you a tad closer to winning the game.
If a teammate has a global ult that hits all of the enemy team or heals all of your team (Karthas, Soraka, etc), they may alert you when their ult is off of cooldown so you can give them a heads up to trigger it. If you're laning with somebody, they may let you know when it's up so you will know when to commit to a fight and when to hit and run. Don't be afraid to ask what a person's ultimate is, if they're a jerk because you weren't born with innate knowledge of LoL characters then that's their problem.
