Veigar is one of the worst laners in the game. Just throwing it out there.
Nid is definitely a tough champion to deal with. You pretty much have to be able to either burst her from full to dead or match her sustain. Matching her sustain can be done pretty well with potions. Not perfectly, of course. If you think you're going to lane against her, don't start Doran's. Grab something like boots + HP pots. Or a regrowth or something like that. While Nid does have virtually infinite HP in lane, she's hardly the best pusher in the game, even in cougar form (she's good, yeah, but can be matched by a lot of champs). If you see a Nid in your lane, just focus on last hitting and not losing your tower as opposed to "winning" the lane.
About hybrids: if you're playing a physical damage champ, there are some things you can do. Bloodrazor, Sword of the Divine, Wit's End, and Malady all let you do some pretty serious magic damage per attack, so keep that itemization in mind when your opponents start bulking up. Mages don't really have an alternative to doing magic damage, though I suppose you could try building physical damage items.
