But you're looking at this too intelligently, at least 70% of the people that ban him do it because they think he's an utterly broken champion that snowballs to no end (which he does). So stuff like insta-ban-Kassadin happen not because the individual people doing it are intelligent. I 100% agree with you that it's just that's "just what you do." People mimic what they see. What they see, though, is what I'm talking to. They see streams or games where Kass gets banned for the exact reason mentioned. Even in high Elo (still talking solo-queue) there are idiots and it's way easier to ban around idiots than it is to comp and play around a champion.
So, yeah, people just do without thinking about why it gets done. Or they just assume it's because "omg too stronk" and whine about it. Kass will fade back into mediocrity as he becomes banned less frequently and people figure out how to play against him on their own (regardless of what lane they're in).
